Chicken, Vegetable, and Rice Skillet

cooked chicken

white rice

can stewed tomatoes
undrained

can mixed vegetables
drained

can chicken broth

sharp cheddar cheese
shredded

celery
sliced

small onion
chopped

garlic clove
minced

butter
salt to taste
black pepper to taste
Instructions
Melt butter in a large skillet.
Add rice, celery, onion and garlic and saute for 5 minutes, stirring frequently.
Add chicken broth and tomatoes to skillet and bring to a boil.
Reduce heat, cover and simmer for 20 minutes, or until rice is cooked.
Add chicken and mixed vegetables to skillet and mix.
Top with shredded cheddar cheese.
Heat on low for 5 minutes, or until cheese is melted.
Season with salt and pepper.
