The Best Linguini With Clams Recipe

One of my favorite things to do when I go out to a restaurant is to analyze what herbs and spices were used in the meal. When I get home, I try to dissect the flavors and duplicate the dinner. I’m not always successful, but I’m getting better. My experience cooking with many different spices and herbs has helped improve my copying skills.
My Italian heritage and growing up with a noodle on every plate has led to an addiction to pasta. It is my favorite meal. Linguini with clams tops my all time favorite pasta dishes. Not too long ago, I enjoyed Linguini with clams cooked by a chef at my table in a fancy restaurant. It was a fantastic meal that I was determined to duplicate.
Making Linguini with clams was not too difficult, because I watched carefully how the chef prepared the dish at our table. After a few duds, I was able to copy the recipe.
Here is my copycat recipe:
Linguini with Clam Sauce
Linguini that has already been cooked (al dente)
1 can of whole or chopped clams
Chopped Parsley
Brandy and Sherry
Half and half cream as needed to make a sauce
1 cube of butter
3 cloves of garlic
Mushrooms
1 tablespoon of corn starch or flour
Salt & pepper to taste
Grated Romano cheese
Optional: 1 cup of fresh basil
Saute garlic and clams in butter and add 1 tablespoon of cornstarch or flour and stir until it thickens into a rue. Add the brandy and sherry to the mix. (A pour of each will do) Then add the half and half and the rest of the ingredients. Add the cooked linguini and presto! Top with grated Romano cheese and some fresh chopped parsley.
One of my more difficult meals to duplicate was an incredible clam chowder. I even asked the chef for the recipe. Of course, he refused. This took me a little longer to figure out, but after some persistence I got it right! You can find this clam chowder recipe also on EzineArticles.
