Try this quick and easy potato pancakes recipe. It can be served as a side dish or a main meal at breakfast, lunch, or dinner.

Ingredients
  

  • 2 1/2 c potatoes diced
  • 2 eggs
  • 1/3 c flour
  • 1/8 t pepper
  • 1 t salt
  • vegetable oil
  • 1/2 small onion chopped
  • sour cream

Instructions
 

  • Beat eggs until fluffy.
  • In blender, combine eggs, potatoes, flour, pepper, salt, and onion.
  • Blend until potatoes are not lumpy.
  • Drop about 2 T of batter for each pancake into skillet with hot oil.
  • Fry until crispy brown on the outside.
  • Serve with sour cream.
