Try this quick and easy potato pancakes recipe. It can be served as a side dish or a main meal at breakfast, lunch, or dinner.
- 2 1/2 c potatoes diced
- 2 eggs
- 1/3 c flour
- 1/8 t pepper
- 1 t salt
- vegetable oil
- 1/2 small onion chopped
- sour cream
- Beat eggs until fluffy.
- In blender, combine eggs, potatoes, flour, pepper, salt, and onion.
- Blend until potatoes are not lumpy.
- Drop about 2 T of batter for each pancake into skillet with hot oil.
- Fry until crispy brown on the outside.
- Serve with sour cream.
