There are a number of low-fat slow cooker recipes available. Below is just a sample of three delicious, vegetarian soups. However, if you like a little meat, then they can easily be adapted.
Crockpot Barley Vegetable Soup
This is a very nutritious soup that contains a range of delicious vegetables along with barley and sweet potatoes.
Preparation time: 20 minutes
Cooking time: 8 hours
Serves: 10
Ingredients:
- 1 cup of medium pearl barley
- 2 sweet potatoes, peeled and chopped
- 1 onion, chopped
- 5 ounces of carrots, chopped
- 2 cups of sweetcorn
- 2 stalks of celery, chopped
- 2 cups of green beans, chopped
- 14 ounces of canned, diced tomatoes
- 3 cups of vegetable broth
- 3 cloves of garlic, chopped
- 1 bay leaf
- 1/2 a teaspoon of fennel seed
- salt and pepper to taste
Preparation:
Put all the vegetables minus the tinned tomatoes into the slow cooker. Leave on low heat for 6 to 8 hours. After this, pour in the tomatoes, stir, then allow to cook for another 10 to 15 minutes. Take out the bay leaf before you serve.
Crockpot Lentil Soup
Other low-fat slow cooker recipes include lentil soup. This is another richly nutritious soup that leaves room for many variations.
Preparation time: 20 minutes
Cooking time: 4-8 hours
Serves: 6
Ingredients:
- 2 cups of lentils
- 3 carrots, chopped
- 3 stalks of celery, chopped
- 1 onion, chopped
- 3 cloves of garlic, chopped
- 1 teaspoon of dried thyme
- 8 cups of vegetable broth
- salt and pepper to taste
Preparation:
Put all the ingredients into your slow cooker apart from the salt and pepper. On a low heat, you can leave it to cook throughout the day, but on high, it’ll take about 4 hours. You can add potatoes for a thicker consistency or tinned tomatoes or ham for a meatier version, thereby creating other low-fat slow cooker recipes.
Crockpot Broccoli Potato Soup
In terms of low-fat slow cooker recipes, this is a very popular one. Again, it’s also open to variation.
Preparation time: 20 minutes
Cooking time: 6-8 hours
Serves: 6
Ingredients:
- 1 head of broccoli, chopped
- 3 large potatoes, cubed
- 1 onion, chopped
- 3 cloves of garlic, chopped
- 1 tablespoon of fresh thyme
- 1 tablespoon of fresh rosemary
- salt and pepper to taste
Preparation:
Put all the ingredients apart from the salt and pepper into the slow cooker and allow it to cook for 6 to 10 hours, depending on the heat. Add the salt and pepper to taste. You can serve this with sour cream, cheese, or even bacon pieces.
