Healthy Low Fat Potato Salad

 

This easy healthy low fat potato salad recipe consists of 11 ingredients, including egg, celery, and mustard.

 

 

 

What you need:

 

  • 8 medium potatoes, peeled and cut into bite sized pieces
  • 2 hard boiled eggs, peeled and chopped
  • 1 c non-fat plain Greek yogurt (preferably Chobani brand)
  • 2 c celery, chopped
  • 3 T vinegar
  • 2 T onion, diced
  • 1.5 T sweet pickle relish
  • 1 T prepared mustard
  • 1 T dried parsley flakes
  • salt to taste
  • black pepper to taste


What you do:

  • Boil potatoes in salted water until tender but not mushy.  
  • Drain and rinse under cold water.  
  • In a large bowl, mix together Greek yogurt, celery, vinegar, onion, pickle relish, parsley and mustard.  
  • Add potatoes, egg, salt, and black pepper and gently mix.  
  • Chill and serve, or serve immediately if desired.
