This easy healthy low fat potato salad recipe consists of 11 ingredients, including egg, celery, and mustard.
What you need:
- 8 medium potatoes, peeled and cut into bite sized pieces
- 2 hard boiled eggs, peeled and chopped
- 1 c non-fat plain Greek yogurt (preferably Chobani brand)
- 2 c celery, chopped
- 3 T vinegar
- 2 T onion, diced
- 1.5 T sweet pickle relish
- 1 T prepared mustard
- 1 T dried parsley flakes
- salt to taste
- black pepper to taste
What you do:
- Boil potatoes in salted water until tender but not mushy.
- Drain and rinse under cold water.
- In a large bowl, mix together Greek yogurt, celery, vinegar, onion, pickle relish, parsley and mustard.
- Add potatoes, egg, salt, and black pepper and gently mix.
- Chill and serve, or serve immediately if desired.
