Bacon and Black-Eyed Pea Soup


This quick and easy bacon and black eyed-pea soup recipe consists of 11 ingredients, including corn, beef broth, and garlic cloves.



What you need:

  • 1 lb bacon, diced, cooked and crumbled
  • 28 oz can diced tomatoes, not drained
  • 2 (15 oz) cans black-eyed peas, not drained
  • 15 oz can whole kernel corn, drained
  • 10.5 oz  can beef broth
  • 2 garlic cloves, minced
  • 1 c celery, sliced
  • 1 c onion, diced
  • 1 c green bell pepper, chopped
  • 2 T butter
  • 1 T red pepper flakes

What you do:

  • Melt butter over medium heat in a large pot.  
  • Add garlic celery, onion, and bell pepper and saute until tender, stirring often.  
  • Add remaining ingredients, except bacon, and continue cooking over medium heat for 20 minutes, stirring occasionally.  
  • Stir in bacon, simmer for 5 minutes, and serve.
