This quick and easy bacon and black eyed-pea soup recipe consists of 11 ingredients, including corn, beef broth, and garlic cloves.
What you need:
- 1 lb bacon, diced, cooked and crumbled
- 28 oz can diced tomatoes, not drained
- 2 (15 oz) cans black-eyed peas, not drained
- 15 oz can whole kernel corn, drained
- 10.5 oz can beef broth
- 2 garlic cloves, minced
- 1 c celery, sliced
- 1 c onion, diced
- 1 c green bell pepper, chopped
- 2 T butter
- 1 T red pepper flakes
What you do:
- Melt butter over medium heat in a large pot. Add garlic celery, onion and bell pepper and saute until tender, stirring often. Add remaining ingredients, except bacon, and continue cooking over medium heat for 20 minutes, stirring occasionally. Stir in bacon, simmer for 5 minutes, and serve.
