Tomato and Mozzarella Bake from Terracotta

Have you tried terracotta cooking? You can make up a dish that can go perfectly with a side, but during weekends, enjoy all the leisure of one-pot meals. You will be thankful that little is required by way of utensils and terracotta clay pot cooking.

Terracotta one-dish dinners are a perfect treat to weekend meals. I’m not really an extremist Dad when it comes to one dish dinners, but I do my best to meet my goal which is “healthy all the year” particularly when coming up with one-dish family meals. I don’t really stress out a no fat policy, for as long as they’re versatile enough to prepare from fresh and frozen foods as well as store cupboard ingredients and leftovers.

 

Tomato and Mozzarella Bake

Ingredients

  • 1 1/2 pounds beefsteak tomatoes
  • 14 ounces mozzarella cheese
  • 2 cloves garlic
  • 2 onions
  • 6 tablespoons virgin oil
  • 4-6 large slices of whole wheat bread, crusts removed
  • 1 teaspoon salt
  • Freshly-ground pepper, to taste
  • 2 sprigs of fresh thyme

Directions

Lightly grease a terracotta casserole dish with butter or margarine. Alternatively, brush lightly with oil. Pre-heat oven to 420 degrees F.

Cut tomatoes and mozzarella cheese in thin slices. Set aside. Finely chop onions and garlic. Put in a bowl and stir in the virgin oil. Leave behind. Arrange the bread slices in the prepared terracotta casserole dish, trimming them to fit. Drizzle a little of the virgin oil mixture.

Arrange tomato and cheese slices alternatively on top of bread. Sprinkle with salt and pepper. Spoon rest of the oil mixture on top then bake uncovered for 30 minutes. Meanwhile, chop thyme leaves finely and sprinkle over tomatoes and cheese on top of bake. Serve on your terracotta piece hot.

This cheese terracotta recipe is so easy to prepare that even your older children can handle under your supervision. All you need to do is slice the ingredients so they are easy to arrange on the terracotta. Why not get out of your comfort zone and try a new cheese or cheese recipe every weekend. The internet can help you find unique cheeses. Starting with a small amount of cheese can usually go a long way. In addtion, trying new cheeses is another great way to enjoy summer along with learning and fun.
