Quick Pork and Rice

 

This quick and easy pork and rice recipe is made in a skillet. It’s a perfect casserole recipe to make in a pinch, for dinner or pot luck.

Ingredients
  

  • 1.5 c cooked pork cut into bite sized pieces
  • 1/2 cup uncooked instant rice
  • 4 oz can sliced mushrooms drained
  • 1 c chopped green bell pepper
  • 1/2 c chopped onion
  • 1 garlic clove minced
  • 14 1/2 oz can Italian style diced tomatoes undrained
  • 2 T butter
  • 1 t Italian seasoning
  • 1/2 t salt
  • 1/8 t black pepper

Instructions
 

  • Melt butter in a large saucepan.
  • Add onion and garlic and saute until tender but not browned.
  • Add the tomatoes, pork, peppers, Italian seasoning, salt, and pepper.
  • Bring mixture to a boil, add rice and mix.
  • Cover and remove from heat for 5 minutes.
  • Stir and serve.
