Southwestern Beef Casserole
Ingredients
- 1 lb ground beef browned and drained
- 1 c frozen corn thawed
- 12 oz jar Pace picante sauce
- 2/3 c Miracle Whip salad dressing
- 1 T chili powder
- 1 t cumin
- 8 oz sharp cheddar cheese shredded
- 2.5 c tortilla chips
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, combine ground beef, chili powder, cumin, corn, Miracle Whip and picante sauce and mix.
- In the bottom of a 2 quart or larger casserole dish, layer 1/2 of the meat mixture.
- Top meat mixture with 1/2 the chips then 1/2 the cheese.
- Repeat layers.
- Place casserole in oven and bake for 30 minutes, or until heated through and cheese is lightly browned.
