Grill Roasted Cornish Hens

Ingredients
  

  • 2 Cornish hens rinsed and patted dry
  • 1/2 c cooking sherry
  • 3/4 stick butter
  • 1 t dried parsley
  • salt and pepper to taste

Instructions
 

  • Season hens with salt and pepper inside and out.
  • Combine sherry, butter, and parsley in a small bowl.
  • Lightly baste Cornish hens with butter marinade.
  • Place hens on center of grill and cook, covered, over medium heat or medium hot coals for 60 - 70 minutes.
  • Baste with remaining marinade while cooking, frequently checking for flare ups.
