What you need:
- 9 oz package fresh or frozen cheese ravioli
- 28 oz can crushed tomatoes
- 26 oz container reduced sodium chicken broth
- 2 medium zucchini, diced
- 1 large green pepper, diced
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 T olive oil
- 1/2 t dried marjoram
- 1/2 t dried basil
- 1/8 t crushed red pepper
- pinch black pepper
What you do:
- Heat oil in a large saucepan. Add green pepper, garlic, zucchini
and onion and saute for 2 minutes. Add tomatoes, chicken broth, marjoram, red pepper, basil and black pepper and bring to a boil. Add ravioli and cook per package directions; serve.
- Great served with seasoned croutons.
