What you need:

  • 2 lbs tilapia fillets
  • 10.75 oz can tomato soup
  • 1.5 c cheddar cheese, shredded
  • 4 carrots, peeled and diced
  • 1 small onion, chopped
  • 1 celery rib, chopped
  • 3-4 T butter
  • salt to taste
  • black pepper to taste

What you do:

  • Preheat oven to 350 degrees.  Spray a 9 x 13 inch baking pan
    with non-stick spray.  Place vegetables on the bottom of pan.  
    Salt and pepper fish and place over veggies.  Dot each tilapia
    fillet with a little butter.  Sprinkle fillets with cheddar cheese.  
    Bake for 10 minutes.  Cover fillets with soup and bake for 30-35
    more minutes.
