What you need:
- 2 lbs tilapia fillets
- 10.75 oz can tomato soup
- 1.5 c cheddar cheese, shredded
- 4 carrots, peeled and diced
- 1 small onion, chopped
- 1 celery rib, chopped
- 3-4 T butter
- salt to taste
- black pepper to taste
What you do:
- Preheat oven to 350 degrees. Spray a 9 x 13 inch baking pan
with non-stick spray. Place vegetables on the bottom of pan. Salt and pepper fish and place over veggies. Dot each tilapia fillet with a little butter. Sprinkle fillets with cheddar cheese. Bake for 10 minutes. Cover fillets with soup and bake for 30-35 more minutes.
