What you need:
- 3-4 lb beef roast
- 28 oz can crushed tomatoes
- 1 medium onion, sliced
- 2 garlic cloves, minced
- 1 green pepper, chopped
- 4 oz can mushrooms, drained
- 1 t oregano
- 1 t basil
- 1 t salt
- 1/4 t pepper
What you do:
- Trim roast of excess fat. Place roast into a 3.5 quart or larger
crock-pot. Add remaining ingredients to slow cooker. Cook, covered, for 8 - 9 hours on low, or until roast is falling apart with fork.
