vegetable oil

sour cream
Instructions
Beat eggs until fluffy.
In blender, combine eggs, potatoes, flour, pepper, salt, and onion.
Blend until potatoes are not lumpy.
Drop about 2 T of batter for each pancake into skillet with hot oil.
Fry until crispy brown on the outside.
Serve with sour cream.
