This easy Southwestern Stew recipe consists of 7 ingredients, including onion and corn. It’s slow cooked in a crock pot for 5-7 hours on low.
What you need:
- 14-16 oz package smoked sausage
- 2 (14.5) oz cans Mexican-style stewed tomatoes
- 15 oz can red beans, drained and rinsed
- 2 c frozen corn, thawed
- 2 c frozen cut green beans, thawed
- 1 small onion, chopped
- 1/2 envelope taco seasoning mix
What you do:
- Split smoked sausage in half lengthwise, then slice into 1/4″ pieces.
- Combine sausage and remaining ingredients into a 3.5 quart or larger crock pot and mix.
- Cover and cook on low for 5-7 hours.
