Southwestern Smoked Sausage Stew

 

This easy Southwestern Stew recipe consists of 7 ingredients, including onion and corn. It’s slow cooked in a crock pot for 5-7 hours on low.

 

 

 

What you need:

 

  • 14-16 oz package smoked sausage
  • 2 (14.5) oz cans Mexican-style stewed tomatoes
  • 15 oz can red beans, drained and rinsed
  • 2 c frozen corn, thawed
  • 2 c frozen cut green beans, thawed
  • 1 small onion, chopped
  • 1/2 envelope taco seasoning mix


What you do:

  • Split smoked sausage in half lengthwise, then slice into 1/4″ pieces.  
  • Combine sausage and remaining ingredients into a 3.5 quart or larger crock pot and mix.  
  • Cover and cook on low for 5-7 hours.
