Scallops Italiano

 

Try this quick and easy scallops Italiano recipe. May also substitute shrimp for scallops for a delicious seafood meal.

 

 

What you need:

 

  • 1 lb large sea scallops
  • 2 T olive oil
  • 1/4 t pepper
  • 1/8 t salt
  • 1 clove garlic, minced
  • 1 1/2 t fresh basil leaves, chopped
  • 2 T fresh parsley, chopped
  • 1 1/2 c tomatoes, diced
  • 1 T lemon juice


What you do:

  • In a medium bowl, combine tomatoes, parsley, basil, garlic, lemon juice, salt and pepper.  
  • Heat oil in a large skillet.  
  • Add scallops and cook over medium-high heat for 2 minutes on each side.  
  • Add the other ingredients from bowl and cook until heated through (no more than 2 minutes) while stirring.
