Picadillo is a Mexican meat filling for tortillas, but can also be eaten as a stew. Try this quick and easy recipe.
What you need:
- 1 lb lean ground beef
- 1 granny smith apple, cored, peeled and chopped
- 1/2 c onion, chopped
- 141/2 oz can diced tomatoes
- 1 garlic clove, minced
- 1/4 c parsley, chopped
- 1/4 c raisins
- 1 T white vinegar
- 1 t sugar
- 1 t salt
- 1/8 t cinnamon, ground
- 1/8 t pepper
- 1/4 t cumin, ground
- 1 t chili powder
- 1/8 t cayenne pepper (optional)
What you do:
- Cook ground beef, onion and garlic in a large skillet until meat is browned; drain.
- Add remaining ingredients and mix well.
- Simmer, covered, for 25-30 minutes, stirring occasionally.
