Picadillo

Picadillo

 

Picadillo is a Mexican meat filling for tortillas, but can also be eaten as a stew. Try this quick and easy recipe.

 

 

What you need:

 

  • 1 lb lean ground beef
  • 1 granny smith apple, cored, peeled and chopped
  • 1/2 c onion, chopped
  • 141/2 oz can diced tomatoes
  • 1 garlic clove, minced
  • 1/4 c parsley, chopped
  • 1/4 c raisins
  • 1 T white vinegar
  • 1 t sugar
  • 1 t salt
  • 1/8 t cinnamon, ground
  • 1/8 t pepper
  • 1/4 t cumin, ground
  • 1 t chili powder
  • 1/8 t cayenne pepper (optional)


What you do:

  • Cook ground beef, onion and garlic in a large skillet until meat is browned; drain.  
  • Add remaining ingredients and mix well. 
  • Simmer, covered, for 25-30 minutes, stirring occasionally.
