This quick and easy pecan carrot cake recipe can be made with items already in your kitchen, including cinnamon and flour.
What you need:
- 4 eggs
- 1 t vanilla
- 1 c chopped pecans
- 1 1/2 c salad oil
- 2 c sugar
- 2 c flour
- 1.5 t cinnamon
- 1/4 t nutmeg
- 2 t baking soda
- 3 c grated carrots
- 1/2 t salt
What you do:
- Blend sugar, oil, vanilla and eggs in a large bowl.
- Stir in flour, baking soda, salt, nutmeg and cinnamon.
- Mix well.
- Fold in carrots and pecans.
- Pour mixture into a lightly greased 9 x 13 baking pan.
- Bake in a preheated oven at 350 degrees for 45 minutes.
- Top with cream cheese frosting after cake has cooled.
