Pecan Carrot Cake

 

This quick and easy pecan carrot cake recipe can be made with items already in your kitchen, including cinnamon and flour.

 

 

What you need:

  • 4 eggs
  • 1 t vanilla
  • 1 c chopped pecans
  • 1 1/2 c salad oil
  • 2 c sugar
  • 2 c flour
  • 1.5 t cinnamon
  • 1/4 t nutmeg
  • 2 t baking soda
  • 3 c grated carrots
  • 1/2 t salt


What you do:

  • Blend sugar, oil, vanilla and eggs in a large bowl.  
  • Stir in flour, baking soda, salt, nutmeg and cinnamon.  
  • Mix well.  
  • Fold in carrots and pecans.  
  • Pour mixture into a lightly greased 9 x 13 baking pan.  
  • Bake in a preheated oven at 350 degrees for 45 minutes.  
  • Top with cream cheese frosting after cake has cooled.
