Low Fat Soup – Tilapia Chowder

Low Fat Soup – Tilapia Chowder

This low fat tilapia chowder is chunky, creamy and delicious. Because tilapia is not a fishy tasting fish I have actually had some people ask me if it was chicken in the chowder. It can be a challenge to get kids to eat fish, but with this chowder they won’t even know it is there.

Reduced fat soups are not only healthy but really make tasty light meals for anytime of day. Served with a piece of hard crunchy bread, reduced fat crackers or crunchy vegetables they are always satisfying. It is also very easy to take any version of soup and make it lower in fat so you really don’t have to miss out on any of your favorite soups.

It can be served with just some reduced fat crackers on the side or with a nice salad and reduced fat bread sticks. My grandson’s love to have a grilled cheese sandwich with their bowl of chowder. If you love thick creamy chowders but hate all the fat, you will love this one. Try taking it to a buffet, or to a church get together when everyone is bringing a different dish, it can easily doubled and even tripled.

What you will need:

1 (10.75-oz) can of cream of potato soup

1 cup fat free milk

1/2 cup frozen corn

1/4 cup finely chopped green pepper

2 tbsp. finely chopped green onion

2 tilapia fillets, cut into 1-inch pieces (about 10 oz)

1 Roma tomato seeded, finely chopped

1 slice bacon, crisp-cooked, crumbled

The first step is in a large saucepan combine the soup, reduced fat milk, corn and bell peppers. Bring it to a boil. Next, reduce the heat; cover and simmer for about 5 minutes or until the bell pepper is tender. Next stir in the tilapia; simmer another 3 to 5 minutes or until the fish is opaque and flakes easily with a fork. Tilapia is such a mild tasting fish and has a great tendency to take on other flavors that are cooked with it. This is way it is such a versatile fish to cook with.

Are you ready to eat because that’s it, this chowder is ready to be ladled into soup bowls. Sprinkle with tomato, green onion and bacon. It is best if served immediately. If you want to cut even more fat from the recipe simply delete the bacon and use your favorite low fat topping of your choice.

The approximate total preparation time for the chowder is about 5 minutes and the total cooking time is just at about 20 minutes. This very quick and easy low fat soup recipe and a family favorite of ours, hope you enjoy it as much as we do! Try it with a low fat salad and some low fat bread, or a low fat wrap sandwich of your choice.
