What you need:
- 4 boneless pork chops
- 1 medium onion, sliced
- 1/3 c whole cranberry sauce
- 1/4 c apple cider
- 2 T butter
- 2 T orange juice
- 2 T Dijon mustard
- 1/4 t ground ginger
- salt to taste
- black pepper to taste
What you do:
- Melt butter in a large skillet over medium heat.
- Season pork chops with salt and pepper.
- Add pork chops and onion to skillet.
- Brown chops on both sides.
- Pour in apple cider and cover.
- Reduce heat to low and cook for 5-10 minutes or until pork chops are cooked through; drain.
- Combine cranberry sauce, orange juice, mustard and ginger in a bowl.
- Pour mixture over pork chops.
- Cook until heated through, about 5 minutes.
