Cream of Mushroom Chicken Casserole

Ingredients
  

  • 1 lb boneless skinless chicken breast halves, chopped into bite sized pieces
  • 10.75 oz can cream of mushroom soup
  • 10.75 oz can cheddar cheese soup
  • 2.5 c cooked rice
  • 1 medium onion chopped
  • 2 celery ribs chopped
  • 1/2 c green pepper chopped
  • 3 T butter
  • 2 T olive oil

Instructions
 

  • Preheat oven to 350 degrees.
  • Spray a 13 x 9 inch baking pan with non-stick spray.
  • Heat oil in a large skillet.
  • Add chicken and cook until browned; set aside.
  • Heat butter in skillet.
  • Add veggies and saute until tender, but not browned.
  • Turn off heat.
  • Add soups, chicken, and rice to skillet and mix.
  • Pour mixture into baking pan and bake for 40 minutes.
