Cream of Mushroom Chicken Casserole
Ingredients
- 1 lb boneless skinless chicken breast halves, chopped into bite sized pieces
- 10.75 oz can cream of mushroom soup
- 10.75 oz can cheddar cheese soup
- 2.5 c cooked rice
- 1 medium onion chopped
- 2 celery ribs chopped
- 1/2 c green pepper chopped
- 3 T butter
- 2 T olive oil
Instructions
- Preheat oven to 350 degrees.
- Spray a 13 x 9 inch baking pan with non-stick spray.
- Heat oil in a large skillet.
- Add chicken and cook until browned; set aside.
- Heat butter in skillet.
- Add veggies and saute until tender, but not browned.
- Turn off heat.
- Add soups, chicken, and rice to skillet and mix.
- Pour mixture into baking pan and bake for 40 minutes.
