This easy carrot cake recipe can be made with ingredients you already have in your kitchen, including carrots, eggs, flour, and sugar.
What you need:
- 4 eggs
- 1 t vanilla
- 1 c chopped walnuts
- 11/2 c salad oil
- 2 c sugar
- 2 c flour
- 2 t cinnamon
- 1 t baking soda
- 3 c grated carrots
What you do:
- Blend sugar, oil, vanilla and eggs in a large bowl.
- Stir in flour, baking soda and cinnamon.
- Mix well.
- Fold in carrots and walnuts.
- Pour mixture into a lightly greased 9 x 13 baking pan.
- Bake in a preheated oven at 350 degrees for 45 minutes.
- Top with cream cheese frosting after cake has cooled.
