Beef Enchilada Casserole

 

If you like enchiladas, you’ll love this quick and easy to make beef enchilada casserole. This easy casserole recipe consists of 9 ingredients.

Ingredients
  

  • 1 1/2 lbs ground beef
  • 3/4 c onions chopped
  • 1 c corn frozen
  • 1/2 c green pepper chopped
  • 1 package taco seasoning
  • 14.5 oz can diced tomatoes undrained
  • 2 c cheddar cheese shredded
  • 10 oz can enchilada sauce
  • 9 corn tortillas small

Instructions
 

  • Preheat oven to 350 degrees.
  • Spray a 9 inch casserole dish with non stick cooking spray.
  • Brown ground beef and onion in a large skillet; drain and return to pan.
  • Add taco seasoning, green pepper, enchilada sauce, corn and diced tomatoes and stir.
  • Cook on high heat until mixture comes to a boil, stirring occasionally.
  • Remove from heat.
  • Spread a thin layer of beef mixture (about 1/4) on the bottom of a 9 inch casserole dish.
  • Top with 3 overlapping tortillas, another 1/4 of beef and 1/3 of the cheese.
  • Repeat layers twice more starting with tortillas and ending with cheese.
  • Bake, uncovered, for 30-35 minutes.
  • Casserole will be lightly browned with cheese melted when done.

Notes

May top with black olives, sour cream, green onions and/or hot
sauce before serving.
