Beef Enchilada Casserole
Ingredients
- 1 1/2 lbs ground beef
- 3/4 c onions chopped
- 1 c corn frozen
- 1/2 c green pepper chopped
- 1 package taco seasoning
- 14.5 oz can diced tomatoes undrained
- 2 c cheddar cheese shredded
- 10 oz can enchilada sauce
- 9 corn tortillas small
Instructions
- Preheat oven to 350 degrees.
- Spray a 9 inch casserole dish with non stick cooking spray.
- Brown ground beef and onion in a large skillet; drain and return to pan.
- Add taco seasoning, green pepper, enchilada sauce, corn and diced tomatoes and stir.
- Cook on high heat until mixture comes to a boil, stirring occasionally.
- Remove from heat.
- Spread a thin layer of beef mixture (about 1/4) on the bottom of a 9 inch casserole dish.
- Top with 3 overlapping tortillas, another 1/4 of beef and 1/3 of the cheese.
- Repeat layers twice more starting with tortillas and ending with cheese.
- Bake, uncovered, for 30-35 minutes.
- Casserole will be lightly browned with cheese melted when done.
Notes
May top with black olives, sour cream, green onions and/or hot
