Baked Apricot Chicken
Ingredients
- 2 lbs boneless skinless chicken breast halves
- 4 apricots; peeled, pitted, and sliced
- 1 c brown sugar
- 2 T lemon juice
- 1/8 t cinnamon ground
- 1/8 t ginger ground
Instructions
- Preheat oven to 350 degrees.
- Spray a 9 x 13 inch baking dish with non-stick spray.
- Layer chicken in the bottom of the baking dish.
- Sprinkle half the brown sugar over the chicken breasts.
- Place apricot slices over chicken.
- Top with remaining brown sugar, cinnamon, ginger, and lemon juice.
- Cover with foil, place in the oven and bake for 35-45 minutes, or until cooked through.
