Baked Apricot Chicken

 

This quick and easy baked apricot chicken recipe consists of 6 ingredients, including fresh apricots, boneless skinless chicken breast halves, and cinnamon.

Ingredients
  

  • 2 lbs boneless skinless chicken breast halves
  • 4 apricots; peeled, pitted, and sliced
  • 1 c brown sugar
  • 2 T lemon juice
  • 1/8 t cinnamon ground
  • 1/8 t ginger ground

Instructions
 

  • Preheat oven to 350 degrees.
  • Spray a 9 x 13 inch baking dish with non-stick spray.
  • Layer chicken in the bottom of the baking dish.
  • Sprinkle half the brown sugar over the chicken breasts.
  • Place apricot slices over chicken.
  • Top with remaining brown sugar, cinnamon, ginger, and lemon juice.
  • Cover with foil, place in the oven and bake for 35-45 minutes, or until cooked through.
