Bacon and Potato Casserole
Ingredients
- 12 medium potatoes unpeeled
- 1 lb bacon cooked crisp and crumbled
- 1 c sharp cheddar cheese shredded
- 1 c mayonnaise
- 1/2 c onion chopped
- 1/2 c celery sliced
- salt and pepper to taste
Instructions
- Cut potatoes into bite sized pieces.
- Boil potatoes in salted water until tender, but not mushy; drain.
- Place potatoes back into pot you boiled them in.
- Add celery, onion, bacon, mayonnaise and half of the cheese and gently mix.
- Spray a large baking pan with non-stick spray.
- Add potato mixture to pan and season with salt and pepper.
- Top with remaining cheese.
- Bake in a 350 degree preheated oven uncovered for 30 minutes, or until cheese is lightly browned and casserole is heated through.
