Bacon and Potato Casserole

Ingredients
  

  • 12 medium potatoes unpeeled
  • 1 lb bacon cooked crisp and crumbled
  • 1 c sharp cheddar cheese shredded
  • 1 c mayonnaise
  • 1/2 c onion chopped
  • 1/2 c celery sliced
  • salt and pepper to taste

Instructions
 

  • Cut potatoes into bite sized pieces.
  • Boil potatoes in salted water until tender, but not mushy; drain.
  • Place potatoes back into pot you boiled them in.
  • Add celery, onion, bacon, mayonnaise and half of the cheese and gently mix.
  • Spray a large baking pan with non-stick spray.
  • Add potato mixture to pan and season with salt and pepper.
  • Top with remaining cheese.
  • Bake in a 350 degree preheated oven uncovered for 30 minutes, or until cheese is lightly browned and casserole is heated through.
