What you need:

  • 3 T olive oil
  • 1 medium onion, chopped fine
  • 4 tomatoes, chopped
  • salt and pepper to taste

What you do:

  • In a cast iron skillet, cook onion in hot oil until tender, but not
    browned.  Add tomatoes, salt and pepper and heat to a boil.  
    Reduce heat and simmer for 15 -20 minutes, uncovered.  Sauce
    is done when nicely thickened.
