What you need:
- 3 T olive oil
- 1 medium onion, chopped fine
- 4 tomatoes, chopped
- salt and pepper to taste
What you do:
- In a cast iron skillet, cook onion in hot oil until tender, but not
browned. Add tomatoes, salt and pepper and heat to a boil. Reduce heat and simmer for 15 -20 minutes, uncovered. Sauce is done when nicely thickened.
