What you need:
- 2 Cornish hens, rinsed and patted dry
- 1/2 c cooking sherry
- 3/4 stick butter
- 1 t dried parsley
- salt and pepper to taste
What you do:
- Season hens with salt and pepper inside and out. Combine
sherry, butter and parsley in a small bowl. Lightly baste Cornish hens with butter marinade. Place hens on center of grill and cook, covered, over medium heat or medium hot coals for 60 - 70 minutes. Baste with remaining marinade while cooking, frequently checking for flare ups.
