What you need:
- 11/4 lbs boneless skinless chicken breast, cooked and chopped
- 1/3 c mayonnaise
- 1 celery stalk, diced
- 2 T onion, diced
- 1 T sweet relish
- salt and pepper to taste
What you do:
- In a medium bowl, mix together mayonnaise and sweet relish.
Add remaining ingredients and mix thoroughly. Serve over lettuce as a salad, on bread or in a pita for a sandwich, or just serve with crackers as a tasty snack.
