What you need:
- 1 lb boneless skinless chicken breasts
- 1/2 c olive oil
- 1/3 c lemon juice
- 1 T dried basil
- 1 garlic clove, minced
- 1/2 t salt
- 1/4 t black pepper
What you do:
- Combine olive oil, lemon juice, basil, garlic, salt and black
pepper in an airtight gallon size plastic bag or container. Add
chicken to container and mix to coat. Refrigerate chicken and
marinade for 4 or more hours, turning chicken at least once to
recoat with marinade.
- Preheat broiler. Put chicken on broiler pan and broil chicken 4
inches from heat, 4-5 minutes per side, or until cooked through.
May brush on remaining marinade halfway through cooking time.
