What you need:
- 2 lbs asparagus, trimmed
- 1/2 c non fat plain Greek yogurt
- 3 T lemon juice
- 2 T heavy cream
- 1/4 t salt
- 1/8 t black pepper
What you do:
- Fill a large saucepan with salted water and bring to a boil. Fill a
large bowl with ice water.
- Place asparagus in boiling water. Cook, uncovered, for 5
minutes. Remove asparagus from saucepan and place in ice water. When asparagus is cool, drain and pat dry with paper towels.
- In a small bowl, combine Greek yogurt, heavy cream, lemon
juice, salt and pepper. Spoon sauce over asparagus and serve.
