What you need:
- 21/2 c potatoes, diced
- 2 eggs
- 1/3 c flour
- 1/8 t pepper
- 1 t salt
- vegetable oil
- 1/2 small onion, chopped
- sour cream
What you do:
- Beat eggs until fluffy. In blender, combine eggs, potatoes, flour,
pepper, salt and onion. Blend until potatoes are not lumpy. Drop about 2 T of batter for each pancake into skillet with hot oil. Fry until crispy brown on the outside. Serve with sour cream.
