What you need:

  • 1.5 lbs red snapper fillets
  • 1 medium tomato, chopped
  • 1/4 c onion, chopped
  • 2 T lemon juice
  • 1 T fresh cilantro, chopped
  • 1 T butter, melted
  • salt to taste
  • black pepper to taste

What you do:

  • Preheat oven to 350 degrees.  Place red snapper fillets in a
    large baking pan/dish.  Season fillets with salt and black pepper.  
    Combine remaining ingredients in a medium bowl and mix.  Pour
    mixture over fish fillets.  Place pan in oven and bake for 16-18
    minutes, or until fish flakes with fork.
